At Il Nido dell’Aquila, we have established the Mountain Cooking Academy,

a multifunctional workshop equipped to host

Cooking Courses for both professionals and individuals,

offering formats ranging from "one-to-one" sessions to groups of up to 8 participants.

 

The cooking courses for professionals focus heavily on the use of new technologies:

 

  •     Sous vide
  •     Low-temperature cooking
  •     Cook & Chill

 

Additionally, thematic seminars cover:

 

  •     Butchery, aimed at utilizing all parts of the animal to create traditional and innovative dishes for the restaurant industry.
  •     Traditional natural charcuterie, including the production of cured meats, marinated products, and items for aging and smoking.
  •     Game and wild meat, featuring modern recipes and cooking techniques.
  •     Fish specialties, combining traditional and innovative recipes.
  •     Fish charcuterie and innovative marinated fish preparations.
  •     Preserves, pickles, oil-preserved products, jams, and marmalades.
  •     Pastry and bread-making.
  •     Management, providing tools for the effective management of a restaurant business.
  •     Food and full-cost analysis.

For cooking enthusiasts, here are some additional activities to enjoy:

 

  •     Cooking class with final tasting of dishes

    Duration: 4 hours – €65 per person

 

  •     Fresh and stuffed pasta course

    Duration: 4 hours – €60 per person

 

  •     Cooking with aromatic herbs class with dish tasting

    Duration: 4 hours – €60 per person

 

  •     Pastry course

    Duration: 4 hours – €55 per person

 

  •     Jam and marmalade course

    Duration: 4 hours – €55 per person
